Italian spices Risotto

 

This recipe for a good tasty and healthy dinner is easy to prepare and will be appreciate from all your friends and family, a great perfume of aromatic herbs will make your meal a different experience!  ingredients for 4 people:

  • 3 continents mixed rice (basmati, wild black and red rice)
  • half spring onion finely chopped
  • 1lt vegetable broth (made with celery, carrot, onion and tomato)
  • 1 organic zucchini
  • fresh rosemary
  • raw coconut butter
  • fennel pollen
  • EVO, salt and peper
  • white wine to deglaze

In a large pot put the onions and the EVO, cook till the onion are gold and soft add the rice and let it roast for few minutes, splash in a drop of wine and let evaporate, add the zucchini cut in small cubes,  pour in slowly the broth one big spoon at the time, keep steering the risotto with a wooden spoon, half way through add the fresh rosemary finally chopped, some pepper and salt and keep adding the broth till the rice is perfectly cooked.

Once cooked add a big spoon of coconut butter, stir well , serve hot with a dust of fennel pollen to garnish!

I suggest you a hot cup of green tea or china white tea to drink with your risotto.
